The Flavors of Tulunadu

A culinary journey steeped in tradition, featuring fiery coastal spices, coconut-rich gravies, and time-honored ancestral recipes.

The Signature Feast

Kori Rotti

The quintessential Sunday feast that brings families together across the coastal region.

A brilliant study in textural contrast, Kori Rotti consists of crisp, wafer-thin sheets of rice (the rotti) generously drenched in a vibrant, fiery, and deeply aromatic coconut-based red chicken curry (the kori).

The magic happens on the plate—the initial crunch of the dry rotti slowly gives way as it absorbs the rich, spicy gravy infused with roasted coriander, Byadagi chilies, and fresh coconut milk. It is a masterpiece of Mangalorean culinary architecture.

The Breakfast Classic

Neer Dosa & Chicken Sukka

Delicate, lacy, and melt-in-the-mouth perfect.

Literally translating to "water dosa," this incredibly soft and paper-thin crepe is crafted from a minimalist, unfermented rice batter. Its mild flavor and porous texture make it the perfect sponge for robust coastal curries.

While it pairs beautifully with sweetened coconut milk and jaggery for a light breakfast, the ultimate culinary pairing is with Kori Sukka (dry chicken curry). The sukka, heavily seasoned with grated coconut, curry leaves, and a complex blend of roasted spices, finds its perfect counterbalance in the cooling softness of the Neer Dosa.

Seafood Specialties & Ghee Roast

Fresh from the Arabian Sea, elevated by local spice mastery.

Tulunadu cuisine is celebrated worldwide for its exceptional seafood. Dishes like Anjal (Seer Fish) Rava Fry—coated in semolina and pan-fried to a golden crisp—and Bangude Pulimunchi—mackerel simmered in a remarkably tangy tamarind and chili gravy—showcase the region's mastery over balancing heat and acidity.

No culinary tour of Tulunadu is complete without the legendary Kundapur Ghee Roast. Whether it's chicken, prawns, or paneer, the meat is marinated in yogurt, cooked in copious amounts of pure ghee, and coated in a fiery, dark-red spice paste that leaves a lingering, irresistible flavor.
